Whole30 No More…

I feel like Michael and I been going non-stop this weekend and our errands/chores aren’t even half way complete. This morning we woke up at 7, made breakfast, baked some cookies (for CrossFit), and finished our Trader Joe’s shopping all before 9. I had high hopes that we would make it through the weekend eating clean to finish our Whole30 strong, but sadly it wasn’t meant to be. That’s right, I broke down and ate one of the cookies I baked for CrossFit, and from there it all fell apart. I’m sure you’re wondering why I needed cookies for the gym. Well, today our CrossFit box held a 1 rep max day – instead of a normal workout we worked on finding our 1 rep max for three different lifts, then had a lunchtime barbecue. By the time the food came out, my self control had already gone out the window. Who can say no to rocky road chocolate bars? Oops. I’m still labeling this Whole30 as a success – 29 days of clean eats is pretty damn amazing.

I have to say that I’m really proud of us for making it this far. It was most definitely worth it, my sleep has improved, I have more energy in the gym, and I just feel better about myself in general. There’s really not a lot of things that feel better than being happy with what you see in the mirror. Yay for self love! Ha!

Getting back to the 1 rep max day, it was cool to see how much we’ve improved since starting CrossFit.

I look at these pictures and can’t believe that’s us doing these crazy movements. If you would’ve told me a year ago that I’d be squatting 110 lbs I would have laughed in your face. It’s amazing how life can change so quickly. I love it!

Alright, it’s time to start crossing off more items on our to do list. We’re throwing a super bowl party tomorrow so we have to clean, cook, and run some more errands. I’ll leave you with my food journal from the last days of our January Whole30.

Big Girl Pants

Today I came to the realization that it might be time to put on my big girl pants and take some more control over the blog. By this I mean split my blog from my personal accounts, i.e. Facebook, Twitter… My Twitter account has already morphed itself into my Paleo persona quite nicely, but I had yet to take the Facebook plunge. So today, I did it, and I hope you all like it! You’ll be able to chat with me, see blog updates, and other articles I find interesting.

In celebration of the new Facebook page (www.facebook.com/PaleoKitchenSync, Please go like!) I threw together this awesome Almond Butter Cookie recipe. One thing I still crave every now and again is peanut butter, especially peanut buttery dessert items. These cookies really hit the spot, moist, nutty, yummy goodness. Don’t just take my word for it, you’d better go make up a batch!

Almond Butter Cookies

1 egg
3 Tbsp. coconut flour
1 Cup almond butter
1/2 Cup maple syrup
1 Tsp. vanilla
1/4 Tsp. baking soda

Pre-heat the oven to 350. Beat all ingredients together with a hand mixer. Once the dough is smooth, drop spoonfuls onto a greased or lined cookie sheet. Bake for 12-15 minutes. Enjoy!

Fruit Should Be Our Cookies

Today when we got home from work, we were greeted with our weekly delivery of organic produce. After putting away the amazing 5lb organic ham for Christmas, and setting aside the vegetables for dinner, we were left with one huge bowl of artwork. We have such a crazy variety of fruit and veggies, I had to take a picture.

Now to go in a completely different direction. Since it’s getting close to Christmas, I thought I’d post a recipe for a special treat, COOKIES!! These are some cookies I threw together to satisfy my craving for chocolate. Before I list the ingredients I feel it’s my responsibility to say that Paleo treats like this should not be an everyday item. If you’re really trying to lose weight or lean out, these aren’t going to help you. We make way too many Paleo treats for our own good, so do as I say not as I do!

Paleo Double Chocolate Chip Cookies

3.5 cups almond flour
3 tbsp unsweetened cocoa powder
1 tsp baking soda
1 tsp salt
1/2 cup chopped walnuts
1 cup unsweetened coconut flakes
3/4 cup chocolate chips
1/2 cup coconut oil
1 tbsp raw honey
1/2 cup maple syrup
1 tsp vanilla extract
3 eggs

Preheat the oven at 375. Combine all of the dry ingredients in a large mixing bowl. In a separate bowl, blend the vanilla, eggs, and maple syrup. Slowly poor the wet ingredients into the dry until well combined. Melt the honey with the coconut oil and pour into the cookie mixture. Stir in all other ingredients. Drop heaping spoonful of batter on a lined cookie sheet. Smash the cookies down into the desired thickness and shape. Bake for 12-15 minutes.
