Prosciutto Wrapped Cod

Holy cow, I can’t believe tomorrow is Thursday! This week has been a blur, I feel like we haven’t had any time to just relax and do nothing. If we’re not working we’re cooking, if we’re not cooking we’re crossfitting, if we’re not crossfitting we’re sleeping… Get the idea? Weeks like this make meal planning so worth it. Without our plan, there’s no way we would be sticking to the Whole30. Planning seems like a lot of work sometimes, but it’s a lifesaver.

Here’s what sticking to the plan looks like:

Day 8 (1/12/2013)

Breakfast:
Banana Pancakes (No added sugar)
1 Italian Sausage
Coffee with Coconut Milk
Snack:
1 Hard Boiled Egg
Mixed Fruit
1 Leftover Pancake
Lunch:
B.L.T Coconut Wrap
Dinner:
Prosciutto Wrapped Cod
Roasted Broccoli
Sweet Potato Soup

Day 9 (1/13/2013)

Breakfast:
French Toast Breakfast Scramble with Bacon
Coffee with Coconut Milk
Lunch:
Chorizo, Veggie, and Egg Coconut Wrap with Guacamole
Snack:
1/2 Apple with Almond Butter
Dinner:
Slow Cooker Ginger Apple Pork
1 Small Baked Sweet Potato
Side Salad

Day 10 (1/14/2013)

Breakfast:
Sweet Potato Soup
2 Eggs
2 Pieces of Bacon
Coffee with Coconut Milk
Lunch:
Cabbage Casserole
A scoop of Spaghetti Squash
Snack:
1 Apple
Handful of Raw Almonds
Dinner:
Fried Pork Chop in Coconut Oil
Butternut Squash Puree
Roasted Green Beans

Day 11 (1/15/2013)

Breakfast:
Egg Scramble
Coffee with Coconut Milk
Lunch:
Leftover Slow Cooker Pork
Butternut Squash Puree
Coconut Water
Snack:
A few Bites of Natural Apple Sauce
1 Small Spoonful of Almond Butter
Dinner:
1/2 Ribeye Steak
Scoop of Guacamole
Small Bowl of Sweet Potato Soup
Roasted Broccoli

I’m sure you’re wondering, “How did you prepare that cod on Saturday night, Amber?”. Well, I’m glad you asked because I have an awesome new recipe for you guys. It’s super simple, fast, and mega delicious!

Prosciutto Wrapped Cod

1 lb Wild Caught Cod
1 Package Prosciutto
Seasoning of your Choice (I used Old Bay)
2 TBSP Ghee or Butter

Cut the cod into several small pieces and sprinkle with your choice of seasoning. Wrap each piece of cod in a layer of prosciutto. Heat the butter in a skillet over medium high heat. Once the butter is melted and hot, sear the cod. Cook about 2-3 minutes per side, until the cod is cooked through. If you’re feeling really fancy, serve with a sauce made from mayo, lemon juice, and mustard. Enjoy!
