Mojitos and Plantains
Hello hello! This weekend is coming to a close and I can hardly believe that Christmas is just around the corner. Michael and I will be heading out to Puerto Vallarta to spend Christmas with his family soaking up some sun on the beach. I. Can’t. Wait. I really need this next work week to go by fast – the anticipation of my first beach vacation is killing me.
Our weekend thus far has been quite busy with a mix of errands and social gatherings. At work on Friday we had a mojito happy hour which was quite tasty and very rowdy. Yes, I said rowdy, gotta love San Francisco!
Saturday morning started out bright and early with some CrossFit and grocery shopping. The workout was definitely the hardest WOD I’ve participated in since we started. We had to do 75 reps of a combination of lifting moves, then run 1 mile. Talk about being exhausted! I was so proud of myself though, I ran that whole dang mile without stopping and that’s a serious accomplishment for me. I love seeing improvements!
Saturday night we headed out for CrossFit Golden Gates’s Christmas party. It was really awesome seeing everyone out of spandex and looking like they do in real life. HA. There were some delicious drinks and plenty of snacks – all served up on the box jump boxes.
We had a lot of fun hanging out with everyone – people who CrossFit are just super awesome.
Moving on to the menu for the week. We’re trying a few new recipes that I’m pretty excited about. We really love plantains so I have high hopes for the Pork and Plantain Hash. I’ll let you know how it turns out.
