Just Another Week

We did it!  We completed our first actual Crossfit class, and it just about crippled me. I guess 132 air squats in 7 minutes can do that to you. I’ve never been that sore from a workout EVER. The muscles right above my knees hurt to the touch, which I’m not quite sure if that’s even healthy. Wah! We were so wiped out that we missed the Sunday class, so our next foray into the Crossfit world will be Tuesday.

I don’t see how Michael and I can NOT get into shape doing this. That one hour was the most intense physical exercise I’ve done since…. never. Hah! Besides the whole, barely able to walk thing, our weekend has been pretty chill. Yesterday we got up early and headed to the Farmers Market and Whole Foods. I love getting grocery shopping done early in the day, all of the shelves are loaded and I don’t have to navigate around the endless shuffle of people. The rest of the day was spent relaxing in the hot tub, catching up on season 2 of Revenge (SO ADDICTED!), and grilling a delicious bone-in ribeye from Prather Ranch. Today I plan on knocking out some of the weekly chores – I know – I live an exciting life, right?

Our menu for the upcoming week seems like a repeat of the past few months. I would love to be able to say that I’m an adventurous and creative Paleo chef, but really I’m just a chef wannabe who repeats a ton of recipes for the sake of ease and insurance that the food will taste good. This is our Paleo reality people, live with it.

Wednesday
L: Leftover Sweet Potato Hash
D: Cauliflower Fried Rice (W/Kalua Pig)

Thursday
L: Leftover Fried Rice
D: Pan Seared Chicken Parmesan with Asparagus

Friday
L: Leftovers / Wing it
D: Hamburgers with Whatever-Veggie-is-Left-in-the-Fridge

Saturday
B: Farmers Market
L: Leftovers / Wing it
D: Out or Grilled Hot Dogs with Veggies
