Rush, Rush, Rush!
One thing you can’t be when trying to eat healthy, is in a hurry. That can be such a source of frustration for me, trying to find something to eat that can be prepared quickly. Don’t even get me started on fast food restaurants. When we absolutely must give in and head through the drive through, we always end up sick. Even the plain hamburger with no bun and side salad let their inner evilness shine through a few days later. I’ve been getting better at throwing quick to the table meals together when it comes down to crunch time. I definitely think looking in your fridge and throwing a fast delicious meal together is an art form I wasn’t blessed with, but I seem to do alright when put to the test. Our meal tonight is one of my go-tos: Fried Pork Chops & Roasted Broccoli.
I just season the pork chops with some organic seasoning salt and fry them 3-4 minutes on each side in coconut oil. The broccoli is super easy also, just preheat the oven to 400, toss the broccoli with olive oil, salt, and pepper, then bake to desired texture. Enjoy!
